Properties: white crystalline powder or flake crystal, specific gravity 2.220, loss of crystal water at 100℃, soluble in hydrochloric acid and nitric acid, slightly soluble in water (1.8%).

Uses: Used in food industry as leavening agent, dough conditioner, buffer, tissue improver, curing agent, nutrient supplement, chelating agent and so on
